Is it possible to define/set the default file type to Unix,
instead of having to choose each time when saving?

PhpED detects the file format automatically. So if you open existing file in Windows format, the IDE keeps it in Windows format until you explicitly change it. If you create a new file, the IDE uses templates stored in templates subdirectory and therefore file format is taken from them. If you need templates to be in Unix format, just override or create your own ones.
