I'm a new user. Just got the trial.

I am setting up a project on a remote host, using SSH. I created the SSH tunnel in "accounts" and tested it fine under the Terminals tab. When I use the new project wizards, my tunnel does not appear in the drop down menu, although it's saved. I can see it when I click the accounts button but I cannot select it for use.

Whad I miss?

Did you create a Tunnel (SSH) account or a Secure Shell (SSH) account? Only Tunnel (SSH) accounts are shown in that dropdown, but you cannot as far as I'm aware test Tunnel (SSH) accounts using the Terminals tab, which is why I'm wondering if you are using the correct type of account.
